I will probably go with the EB and max tow just to be safe and give me extra room for a bigger TT down the road. Hopefully I won't have to deal with the CAC issues...

I think you will be happy with either powerplant. The big thing is to get the MaxTow for the 3.73 and the higher payload. The difference in fuel economy between the 3.55 and the 3.73 is negligible at best. My last trip on the highway unloaded my truck got 20mpg running 75 mph between San Antonio and Houston. Same truck with 3.15 rear gears and 5.5' only does ~0.5mpg better (BIL's truck).
As far as power plant I am biased to the EB. That said, I was a EB skeptic before I bought the truck. It took a road trip in BIL's truck to convince me it was a great little motor. Once I got mine, the first tow proved I made the right choice. All the power with out the RPM drama of the NA V8's I was so used to driving. As mentioned, this little engine just does it thing and cruises, regardless of the load.

See? It works in monkeys!
I have both. My TT is 7450lbs and I will say, my XLT with HD Payload, Max Tow and EB is a superior platform.
That being said... My FX4 with standard tow, 3.73's and 5.0 tows the trailer without fuss.
A WDH and air bags do help as well.
