Default Stall on quick stop and going into reverse

98 5.4 4x4
sometimes when coming to a quick stop and ALOT of tmes when shifting into reverse, my truck will stall. RPMS seem low at idle, usually around 500, and when idling at 500 the tach will just drop to 0 and sit there til I hit the gas the it goes back to normal.
IAC looks new (only had truck 2 weeks), inside is clean. However when idling, if I unplug it, nothing happens.
truck has long tube headers, no EGR, custom tune, K&N flter and Gott's Mod. Electric fan.
truck also has A Pillar gauges and the temp gauge never even goes above 150. Top radiator hose is firm and hot when running. Don't know if that's related, figured i would put it all out on the table.
Is IAC bad since there is no change when it is unplugged? Can the wires leading to it be tested to make sure it isn't an electical problem? This thing looks brand new with no carbon at all in it!

Any ideas?

Mine did that and it was iac/ and upstream o2 sensor

Mine did that shortly after I bought my truck. Turns out an O ring behind the driver's tire well was busted and it leaked transmission fluid. When I hit the breaks it would stall or when i turned the wheel sharp. It also had the low idle. Check your fluid and if it is low start checking for leaks.
