It's just a guess. Might also be that the modified exhaust piping is affecting flow around the sensor. If it was mine I might get some wrecking yard Motorcraft sensors and pop them in to see what happens. A few dollars and some time and it might answer the question.

p.s. On the monitoring of live data - if you can see your O2 sensor values and your scanner is fast enough to show something, it would be interesting to see if one goes wonky before the other one does. Seems weird that both are getting stuck rich. That might be a clue.
