Default temp guage and cylinder over temp code

I would appreciate some advice. I was driving my truck (04 f150 5.4 triton) and my temp gauge suddenly went from middle to pegged. I pulled over and checked my coolant, belts, and hoses. Everything was fine. I started it back up and the temp was normal at the gauge. I've had this happen more frequently now and the gauge jumps from normal to pegged in less then 2 seconds. If I turn the engine off or cycle the ignition it immediately goes back to normal and stays put until it randomly does it again. I am guessing this is electrical because of the quick gauge movement. I believe it maybe the CHT (cylinder head temp sensor). How many coolant temp sensors are there? Anyone have a clue about any of this?
