Default Which offset

I have a 2.5 inch leveling kit on my 05 Fx4 and I'm buying the 20x9 XD Hoss rims. I like the wider look with the -12 offset but i don't want it to rub, Is it safer to get the +18 offset or -12 offset, whatever will rub less. The tires are 295/60/20 Trail Grapplers

The more negative the more the stance. Definitely -12 will rub less for sure.

my +18 fuel throttles stick out maybe a 1/4" to 1/2" at most past the factory FX4 flares.

I like the look of it sticking out like under an inch, I have the flareside Fx4 so i'm not sure which would look better and not rub

Sticking closer to the oem +44 offset will allow the largest tire. Negative offset wheels are fine if you have 6" lift or more, otherwise they look funny and have a great tendency to cause rubbing. Very nice tire choice and size, I like those
