The battery disconnect was my next move, I knew someone who had a Taurus and one day it decided to stop shifting into OD, Dealer said the trans had to be replaced so they sold it cheap. The buyer pulled the battery cables overnight at it went back to working normally!
I really doubt the Fuel filter or FPDM as it eventually straightens out and picks up with full power, just a lag on throttle increase, it seems as they would affect all high fuel scenarios. And a clogged CAT would stifle the motor at high RPM/Exhaust flow. Looking at aftermarket replacement MAF at @$100 and throttle bodies @$200 I shouldn't be in too bad of shape if they end up being the issue, with 230,000 miles the truck deserves a couple of new parts!

The Throttle Position Sensor (TPS) would probably be my next suspect.

Well, the battery reset was no help, truck idles great and above @3500 rpm has plenty of pep as was the case before the reset. Just sluggish between 1500 and 3500 rpm. I have one other thing I want to check, there is a plastic cone that fits inside the intake just after the filter that adapts to the MAF, it may have been dislodged or out of position.
