erratic tempature readings

2004 f-150 4x4 with 5.4, temp gauge reads normal then goes past the c. have took off the intake, fixed wires mice chewed on but still the same. maybe cht sensor?

What is in that CHT sensor that mice like to eat. I have had that happen to my '05!!!
