Default engine temperature

I'm running the troyer e fan set up, and I have an edge tuner, recently 1 of the relay controls for the fans went bad, so I noticed the temperature reaching 200 degrees , I replaced the relay now both fans are running but I am still at 200 degrees, is this normal?? Thanks for your input!

Well the f150 with a 5,4 has a factory installed 195 degree thermostat and that is at the time it starts to open so usually 15-20 degrees above the rating of a thermostat is completely normal
