I have a 2wd 07' sitting on new wheels and 33" tall tires. Should I regear and if so... what gears?

Very doubtful you need to. What are your current gears? Check axle code on your door jamb. I had 3.55 and 33s and the combo worked fine. If you have 3.73 gears there would be even less reason to regear.

No, especially if you have 3.73 gears already, fuel economy will only go down like 2 miles per gallon

Since fx4 you already have 3.73 so unless you tow or off road a lot you will be just fine with 3.73. If you do lots of highway driving your mileage would drop with a gear change. It all depends what type of driving you do and acceptable power loss. You have a programmer? Would recommend that before gear change to get your shift points in line with the larger tires.
