I drove the truck around for a few hours; steady temps, no leaking. I'm starting to believe all the issues were caused from a faulty thermostat.

That could be. If the thermostat sticks closed, it will cause the engine to overheat and boil off coolant through the overflow, accounting for your earlier coolant loss.
