Everything I've read says the 3 inch level causes a lot of wear on the ball joints, but the 2.5 inch does fine with them. Something about CV angles and what not. The 2.5 is the recommended one from what I've seen.
This all based of pure reading, I have an older truck and can't comment from first hand experience

If you have 2x4 i would go with the 3" level if it's 4x4 go with the 2.5" so you don't have the cv shafts at a steep angle.
As far as install goes you need some basic hand tools, jack/stands, and about 2 hours. Make sure you get the spacer that the bolt holes are straight and lined up through it if not you will have to remove the strut completly and install it backwards.
I can't seem to get the link to copy but, there is a thread in the how to with pics/instructions

Go with the 2.5" HBS kit. I put one on my 2x4 2004 Lariat SCrew Sunday and it sits just right. Replace anything that is worn while you are doing it. That way, you only have to get it aligned once. Not the best picture, but here it is with the 2.5" HBS kit installed. My tires are 275/65r20.

I have ran the 3" for over three years no issues, however the 3" will give your truck a slight rack to where the back will be about a 1/2" lower. I am going to take the stock two inch block out of the rear and replace with a 3" block which will make my truck slightly higher in the back. Either way you decided the truck looks good!
