You shouldn't even need to cut any wiring if you get the wiring harness adapters from Crutchfield. You won't need any speaker plate adapters if you buy a 5x7/6x8 size speaker.
And yes, these two sizes are COMPLETELY interchangeable and have nearly the same cone size as well.

You're the man... Now, if I can just meet a best buy guy who knows what I am actually talking about. That's my favorite... You call a place and educate the person that works there on what products they sell. Autozone is a great example.

In my experience, the best speakers Best Buy is gonna have in the store for you aren't going to match the quality you can get for the same price online. Also, even though they'll have a demo rack set up, that is not going to be indicative of the actual sound you're going to get. If BB has those harnesses, then I'd be willing to bet that your car audio store will also have them (I previously just thought they were mostly available online).
I'd recommend going for anything in the Alpine/Rockford Fosgate range if you want a warmer sound, JBL/Boston/MB Quart/Infinity if you'd like the sound a little brighter.

Kicker's higher end stuff is good, but you don't want to drop into the entry model stuff unless you don't care about SQ, and you care more about loudness.
Kicker is on the warmer side for the most part, but their three-way coax gets a little bright in a harsh way.

Take a look at Infinity, Polk, etc. Just order online at Amazon and you can get them dirt cheap. Take a look at the other thread, ~"Improving Factory Sound", and you'll find links to a bunch of good replacements.
As far as the adapters, these are what you want.

I have a question... I am not super audio savvy, so forgive me if this is naive, but could you eleborate a bit more and explain "warmer" sound and "brighter" sound? I've always wondered what exactly this means.
