Do dealers accept deposits to hold a new truck for a month?

Depends on the dealership. A month is rather long to hold a vehicle though. Call your dealership to find out what they're willing to do for you. But just note....asking to hold for a month will tell them that you REALLY want a particular vehicle and they will likely use that to their advantage when it comes to negotiations.

For a day or two? Maybe. A month, highly doubtful.

If you're worried about it being gone while you secure a down payment, sell an existing vehicle, or secure financing, then I'd either be a bit more flexible in your wants, or order the vehicle.
