From what I have read here, I'm in for a new timing chain. Classic symptom of no power when trying to accelerate.

Any suggestions what else I should have looked at when it gets opened up? I had the plugs done very recently, mechanic said everything else looked fine.

Do you have any grinding noise at startup after letting the truck sit for about 8 or more hours, if not, I wouldn't be thinking timing chain stuff.

This sounds like one of your sensors is bad or a wire/plug was broken when the plugs were done. Lots of little connector near the plugs that with just the right pressure can break.
