With 100,000 miles you should purchase new front coil spring insulators. These are an expensive ($50 each, one on each side of the front suspension) moulded foam rubber piece that goes between the coil and the strut assembly top mount. If your truck had less mileage, you would re-use these pieces. Your existing coil springs should be fine.
Too, your truck is nearing the point where the front suspension ball joints might need replacement. Think about doing new parts along with the Bilsteins. New control arms, tie rod ends, etc. Your truck would then feel brand new.

Update - shop ran into some trouble getting the bottom coil seat off of the old shocks to transfer over and was not able to finish the job yesterday. I stopped by this morning on my way to work and they still had to do the alignment. I went ahead and paid and will pick it up this evening. Ended up at $290 out the door ($220 labor, $70 alignment). So total in this deal I have:
$340 for the set of 5100's
$85 for the new coils
$290 for install and alignment
$715 total
Honestly if I had to do it all over again for a truck with 100,000+ miles I would probably just pay the extra 400 and get the Fox 2.0's. That way I would have had an entirely new assembly and not deal with all of this back and forth on which parts could be reused or not.
I'll post before and after pics tomorrow

I wasn't able to pick it up until late last night so it was after dark when I got home. Snapped this pic in the parking lot at work this morning. I haven't measured yet but looks pretty dang close to level with plenty of clearance for bigger tires
