$850 total to install front/rear Bilstein 5100 and 1in. rear block--Waste of money?
$850 includes purchasing the Bilstein kit and rear block. Did I pay too much for everything?

Are you happy with drive-ability and install workmanship? You can always find someone who has or will do it cheaper but at what cost in quality?

I did that entire job myself minus the rear block.
I think the parts are around $500? If so $350 in labor seems reasonable, especially since you need to remove the springs from the struts.
Also remember you need an alignment when your all done.....

Maybe a breakdown would help.
5100s (all 4): $370
Rear block: $100ish (depends on what brand)
Installation: $200-350
Alignment: $100
This is assuming you are paying someone to do the whole job. If you could do some yourself, that'll be great. Rear shocks and blocks are simple, even for a rookie. Front shocks can be daunting for some people. Your call.
