As long as I can still get the plain old 6.2 with a 6 speed and 4.30 gears, I don't care what else they offer but knowing ford, they'll screw with a good thing and make it "better".

I highly doubt they're gonna use the weaker 10 speed transmission (650 max ft lb torque) in the 6.7L diesel, especially since it was made specifically for the diesel engine and has higher power ratings (1400 ft lb torque). If anything, they're re-tool the existing 6R140 to add the extra gears.
They're going to offer a 3.0L Diesel engine in 2018 model and couple this with the 10 speed transmission. Maybe this will fit your desires? It's gonna be in a 1/2 ton truck though. Like someone else mentioned, the 6 speed in the 6.7L diesels are great.

The torque curve for the 6.7 is so wide, any more gears would be of no value to driveability.
