Default Thinking about my next project.

I know theres a few other threads on this but thought maybe I would get a fresh look. I've always wanted to get a 7th gen F-150 or 250 to restore and trick out. It will be a truck that I use not just sitting in the garage. I'm thinking an extended cab, short box, 4x4. Would like a four on the floor (maybe upgrade to a 5 or 6 speed?)
Cant quite decide between a V8 or the I6. V8 seems to be more common with more parts and options to customize. But the I6 I think would be cooler I think just for the fact that you dont see as many, and seem to be more durable. I had a '93 with the I6 and I swear that thing could move a mountain in first with no oil. The other option would be a diesel F-250 but I have zero experience with diesels, might be cool though.
I'm aware of all the pitfalls with decayed wires and hoses and rusted out floors, but is there anything else I need to be on the lookout for? I've heard of some of the early ones have the frames cutout to save weight, how much of an issue is that? Something to avoid at all costs?
Look forward to everyone's opinions.
