I am not understanding the meaning of the starter grunts? Let me tell you some of the issues that the 351M engine had, that could be associated with the difficulty in starting. The intake gasket by design was a complete screw up on Fords behalf. If you are sucking in air, naturally the mixture is incorrect for the affected cylinder. This is not good especially with a carburator.

Still trying to come up with the starter grunts, do you mean it slows down while cranking or even stalls? Does it speed up at certain spots? Perhaps a simple compression check is in order. Fords are Fords, they don't have starter motor issues as does the Chevy brand. Unless someone has replaced the starter with a gypo rebuild, if so, all bets are off.
