Default How much HP do i need?

I have a 1967 F100 long bed truck that i will be remodeling at some point in the future and i was looking around on line the other day at crate engines and had a horsepower question. How much horsepower do i need? This wont be a drag strip truck but i would like to be able to give a stock Mustang GT a run for its money. I also dont want a motor that has such an aggressive camshaft that it has trouble idleing and to where im always having to tune it to run well. I will use this truck as somewhat of a weekend cruiser and drive to work in it two time a week or so and maybe even pull my aluminum 16ft boat to the lake every once in a while. Im looking at using a 350 or 351 motor. Im leaning towards a 350 Chevy engine but one of the websites i was looking at that sells crate motors has it in varying hp numbers. They have a stock one that has 270hp, one that has a better cam that puts out 350 hp, one that has 375hp and one that has 400 hp. If you go over 400 hp they suggest a 383 stroker instead of the 350. Like i said before, i would like a lopy sound and a quick truck but i dont want to go so high in hp that the motor will not be a good street/daily driver.
