Sync 5 ?
I think we tell ourselves things like this to make us feel better. But if the data comes from one source or a combination of 5 sources does it really matter?
And that data is a valuable asset. You're better off assuming that a company, ANY company, will not pass up revenue and just sit on that asset. It doesn’t matter what feel-good statements are made in a press release or interview.

But even with all that, there are a ton of things I do every day, including using this site, that reveals some details and this site clearly uses cookies and has ads and that, some of which may try to do cross site tracking or whatever. It's not reasonable to escape everything, but it absolutely makes a difference if it comes from five sources or one because of the single virtual person I mentioned before. With Google if you use all their services, they can know with a high level of accuracy all of those details and they can be selective about what details they gather. They own not only your data, but what information in that data they care about. So when they sell your information, they can sell a representative version of you that is so complete that as I also said, only your spouse has that level of detail.
But if you don't use Gmail, or Google Search, or other major information sharing services like Facebook, then they only get pieces. They also don't always know for sure that the piece they got from Ford really represents me, or maybe it was my wife driving? It's not like we log into the truck with our Google account... yet. But what if we did tie our Google account to Sync 5? And so did my wife? So when I drive it knows based on my FOB that I am driving right now. So now my google maps navigation and GPS info is directly shared to Google.
It's not that they can't potentially build that virtual person from five different sources, it's more that having five different sources with different priorities helps create a type of "fog" about how accurate that data is. The more you let one company control that data, the less fog there is. It absolutely matters.
Only thing I worry about with the Google platform is the... Google part. They don't make fast or efficient anything in the mobile or browser space. Only advantage might be in having more seamless connectivity options like with Navigation if you just have Google Maps built in.
Maybe it will be good, but even if it is, there is always that Google information gathering that I don't love. Nothing is ever free with them, and I don't particularly trust that their agreement with Ford will include the ability to opt out of all tracking.
