Default Bluetooth and wifi

OK guys. Took delivery of the new ride this week and needless to say all the tech is a bit challenging for an old guy. If someone could shed some light on the following questions it would be much appreciated.
When I picked up the truck I paired it to my iphone. Alls good. Today, while making a call wireless (assume blue tooth) it disconnected from the truck? Previous calls no issue. Looked at truck settings and it showed I had to connect with phone? Every time I tried to connect BT to phone it would say something about disconnecting from Carplay. May have posted a few other messages but the truck would not connect. No matter what I tried it appears the truck wants either Wi-Fi or BT but not both?
Can you have both on simultaneously?
Does it automatically switch back and forth?
I am often in locations with limited connectivity?
Do you have to have a Wi-Fi connection for Carplay? Will carplay work off phone data?

CarPlay uses Bluetooth for the initial handshake but uses WiFi for the heavy lifting.

CarPlay connections

Just occasionally, there is a dropped connection if I'm in a military base, police or fire station. If the truck is new to you there may also be updates that it gets while you are driving that freezes the system or causes it to hiccup. They are rarely delivered fully up to date.

Sometimes I wish for the old days where the only updates it got happened at the local dealer.
