Angry Stalling issues, with bucking

I have had a lot of issues lately. Background, a 94 f150, 218 k on it. When i start the truck initially the voltage meter goes crazy up and down for about 10-15 seconds, and you can feel it come close to dying, but never does. After the initial seconds, its fine.

I could be driving 25, or 55 and then it will "buck" on me for a second or 2. But lately the biggest problem is I come to a light, or stop sign and it dies, and dies, and dies.

I don't know much about vehicles, but we've changed/replaced/tested a lot of things.

Plugs/caps
Oil
Fuel filter
Fuel pressure regulator,
and a few sensors have been replaced.

We've checked and passed on battery/alternator.

I'm sorry if my post is vague, but my limited knowledge might hurt me here. We've tested it on the computer, but the guy at the shop says because my airbag is faulty, it doesn't read anything(dont know how bogus that is).....so really we can't pinpoint the issue. Wasn't having any issue before, just all of a sudden. There is a small oil leak from a gasket I've noticed recently, but I'm doubting that has anything to do with my major issue.

Any help is appreciated.
