What kind of problems, if any, can I expect from going from a 195 thermostat to a 160 in my. '05 f150 5.4?

A thermostat controls how fast your engine warms up. The temp rating 160, 180, 195 etc is the temp that it opens up. While closed it blocks or restricts coolant flow through your radiator forcing your motor to build heat up before it opens. Remember, when your motor is at operating temperature usually around 212 or 215 *F your thermostat is wide open regardless of what temp rating it has. As far as computer sensors needing heat to work - then there would be a lot of vehicles in North America that wouldnt run between Sept and April so therefore that statement is not accurate.

On a really cold day it may seem like it takes longer to warm up thats about all.
