As of now I have a pipe in place of the stock muffler for a delete. It drove me nuts and I’ve been looking just to throw a muffler back on. Now the pipe is fabricated so the inlet just fits over the 2.5” pipe and the outlet is made to fit over the 3” pipe and is just has clamps to hold it in place.
the plan is to cut that pipe in the centre to clamp the muffler onto the “straight pipe” which is 2.5”. My questions is will these clamps work on either end? Seems like they would and I don’t feel like paying someone to do it or I might as well buy a cat back system which I can’t do right now due to labor costs.
Depending on the length you cut you can use those butt clamps or if the pipes will fit into the muffler you can use similar band clamps in a "lap joint" configuration. I prefer the band clamps as they allow you to change configurations or replace components as they wear out whereas the old U-clamps distort the metal making it difficult to repair. I've used band clamps on my past 3 trucks.

It's just a straight pipe that's 2.5" but flares out to go over the 3" outlet into the stock tailpipe. Same with the inlet it's slightly flared to fit over the pipe for the inlet. I'll look into band claps as well. Should I keep them 2.5" just to be safe?
