Love sport mode, hit the button every time, it's like a different truck with extra power. Can't imagine what a tune would do. As for MPG's, like Booze said if you drive the same in either mode, not really any difference, however I will lose about 1MPG mostly due to the quick starts from stop lights and mid range passing power.

If you don't take your foot off the gas it won't shift for me either. I've been near redline in 3rd and 4th gear and it didn't shift even after I let off. Once I pressed the gas again it shifted. I honestly think it's by design.
You might think your truck has had enough but your truck disagrees with you. Lay into it. If it's not shifting to the gear you want you can always pop it out of Sport Mode and it will upshift/downshift for you. Or drop into Manual mode and do it yourself.
If you don't like the way the truck shifts, keep it in manual

If so, didn't the tune change shift points/strategies, etc... when all of the added boost (tq/hp) was added?
I was hoping that after driving around in Sport Mode, if I lifted off of the gas, the truck wouldn't hold such a high gear for so long (assuming I got a tune)

It's the only way to drive around town lol. However, it scares me sometimes when I'm really laying into it and it doesn't shift till just before redline. Is this something other sport mode users have noticed? Should I get it checked out at the dealership? I think it's awesome, but I just can't wrap my head around why the shift point is so extreme and it doesn't let you upshift if you think your truck has had enough.

I remember the first time I discovered sport mode...I was driving a "study" truck from work, so I didn't know much about it. When driving in sport mode, I remember thinking, there is NO way this big 4x4 PU should be this much fun.....not to mention just ~160 cubic inches providing that fun! That was back in April. I now have my own, thanks to the September incentives

I almost always engage sport mode when I drive. The only times I take it out of sport mode are in bad weather or when traffic is particularly bad. Sometimes it hangs in a gear too long in sport mode while moving through traffic so I'll switch back to normal for that.
