I've learned that if you lock the truck with the fob or the button on the door, that the alarm includes the interior motion sensor.
If you use the little fakey key inside the fob to manually lock the doors, the doors are locked but without the interior motion sensor. Learned this because my dog kept setting off the alarm, too.
Only a partial fix to your laundry list of issues, but thought it might help.

I'm certain your Ford salesperson along with Ford described the features to him perfectly before he bought the truck? About how intrusive and aggravating Ford made their trucks. Some people just want a really nice truck, without Big Brother, telling them which hand to use to wipe their butts!

I'm not 100% sure, but I think I read that someone with the Ford software can turn those features off permanently. As far as locking your key in the truck, if I remember right from reading the owners manual, when you lock the key in the vehicle with the key pad it disables that key so if somebody breaks into the truck that key will not work.
Thanks for the comments and yes i would have just bought an XLT but the accountant of the family would only approve of a new truck if it had heated seats (I know, I know).

Using the keypad, you can lock the XLT with 302a option package, no beep, no nothing. No dogs, so I can't speak to the sensors going off with someone/somedog inside.
Alexb2000, the 15's are getting a bit more scarce, but if you found a buyer for your vehicle, did a private party sale, and got into a new XLT, that would lessen the blow to your pocketbook. Did you lease or purchase? Because there is a pretty cool site that allows other people to assume your lease/payment, allowing you to get out of it. Also, depending on who you financed through, you could do the same thing on a purchase.
Just some ideas.
