Any time I try to use nav using Google Maps or Waze with my phone connected through Android Auto, I have this sidebar screen. I realize I can tap the map for fullscreen, but is there a way to disable this sidebar from showing up at all?

Nope, that's the latest upgrade feature. You will have to tap every time.
