because 95% of them don't know any better or even know what heatsoak is with regards to the intercooler. What they don't realize is on the back end the computer is pulling ignition timing and they're making less power, not using the fuel or tune to its maximum potential.

Don't be fooled. The stock intercooler is lousy. It's lousy for a stock truck. It's terrible for a tuned truck.

The thermostat determines when the cooling system is allowed to start cooling the engine. Then we also adjust the engine cooling fan temperatures for customers with the lower temp thermostats to help keep the engine's coolant / cylinder head temps lower as well. So sure adding a colder thermostat alone on a factory tune that's not set up for the lower opening temp is not going to be as helpful without the lower fan settings our custom tuning would provide. Ford's OEM thermostats are typically a higher opening temp on their non-performance models also for example the Mustang 5.0L has a lower temp thermostat than the F-150 5.0L. The EcoBoost vehicles also come factory with a lower temp thermostat than their 3.5L Naturally aspirated counterparts. If there was absolutely no benefit to a colder temp thermostat with the proper calibration changes, then why would Ford waste their time putting 180 range stats in turbo and performance applications when then put 192-195 temp stats in most everything else?

Intercoolers help by lowering the air charge temperatures which is a whole other story. The Ecoboost vehicles for example can make decisions based off of coolant temps and intake air charge temps as well. Colder more dense air charge entering the system is always going to help further. Also as they see cylinder head temps rising it can make adjustments based off of that such as retarding timing as it sees fit. I was simply saying that in my opinion a good custom tune for higher octane fuels with the colder thermostat and also adding a larger / upgraded intercooler would be a great way to get the best performance and efficiency possible, especially in more sever duty uses such as towing.

Been running 5 star tunes for about 6 years now and two different trucks and it gets up to 105 deg in the summer where I'm at, never had an issue towing or not.

You'll be very happy with 5 star, absolutely the best towing tunes available.
