Default I have a steering/pulling issue.

When my truck is on a crowned road it will pull away from the crown, I have to apply a good amount of pressure on the wheel to keep it straight.
Isn't EPAS supposed to compensate for this? When I drive on a flat road it goes straight with little to no input needed on the wheel. I don't recall my 2016 behaving like this.
My truck is a completely stock 2018 with 11,000 miles.

That sounds completely normal to me. If the alignment was off, it would not drive straight on a flat level road.

Agreed. The EPAS does not make any adjustment for the crowned road that would keep it from taking the natural shape of the road.
