Engineering mode EUREKA moment...
I have tried every solution I could find, and thank you to everyone that responded to me and provided possible solutions in the past, but none of them worked for me... I could get into engineering mode randomly sometimes, but could never figure out the "foolproof" method.
Because I'm an IT guy and can't let things go, I did figure out the steps that do work for me.. and I can do it without starting the engine...The key is the Airbag light under the tachometer... I posted a video below. (yeah it's crappy and I need to clean my dash... LOL).. It's not easy holding an iPhone, holding the OK button, and pressing the start/stop button all at the same time!

- Start with engine off.
- Press and hold OK Button on the left side of the steering wheel
- Press Push Start Button only without touching the brake pedal
- Keep your eye on the airbag light... as soon as it goes off, let go of the OK button... that will make the gauges start clicking and spinning...
- When the gauges stop dancing, hit the OK button and you are in Engineering Mode..
- If you press the brake and start the engine now, it will stay in Engineering mode.
