Up here in Canada some dealerships charge up to $800 doc fees, when I did my deal with the sales man I just told him I wasn't paying that BS fee so he didn't include it.

They're quite negotiable. You point to the amount and tell the F&I worm "I ain't paying that ****, fix it". If he gripes, leave. You probably won't make it out of the office before he goes to discuss it with his "supervisor" and grudgingly agrees to remove it.

Several Years ago I asked a Salesman what a DOC fee was and he simply answered "dealer profit"

Here in TN, a doc fee can range from $189 to $799. Small hometown dealer will charge $189 while a metro Nashville dealer will charge $799 (Nissan dealer)

Really doesn’t matter what the dealer charges for doc fees. The only fee a buyer should be concerned with is the final price for the truck out the door including all fees and sales tax and dmv charges.

In Michigan dealers are required to keep the paperwork (not computer files) for 7 years. That is what the Doc fee is for. They are supposed to charge everyone the exact same amount. Nothing says they can't give you a discount equal or greater than the Doc fee however.
