I hate these new center consoles that take up so much leg and hip room. Had bought a 2019 XLT with jump seat.
Took out the jump and replaced it with a junk yard console from a 1996 Tahoe, $35.
I upholstered the top by adding 2" of foam and covering in black "PLeather", $50 or so.
Only caveat was this console has 1 cup holder on the front under the flap door.
So I add a hump tray to hold my phone and give the passenger a cup holder other then the under door.
Now seats smash out evenly, edges not rolling up console. Right knee has room and not rubbing.

 

Looks pretty good. I had a similar feeling with my '15's jump seat so I swapped over to a 04-08? console. Had to make a rear bracket, but fits pretty well, and I threw in a couple of seat-side pocket deals to fill in the small gap.
