Your 5.0L actually has an EOP sensor and the PCM controls oil pressure via a solenoid actuated valve. FORScan should, therefore, be able to read the actual oil pressure. Sorry but I don't know the PID for this.

When, why and to what pressure?

Why would oil pressure need to be controlled?

My guess would be regulating oil pressure up to the valve train controls that run off oil pressure.

I don't have that information. I'm assuming controlling the oil pressure has something to do with the VCT system, and/or fuel mileage, but I'm just guessing. All DOHC engines send a lot of oil to the top end of the engine to help lubricate the cams, cam drive, lash adjusters or buckets, and valves. To make sure these parts are properly lubricated at low and mid rpms, a large oil pump is used and this probably results in excessive oil pressure at high rpms. Here are the schematics.

A Ford Performance Coyote Technical Reference document has this image in it that suggests it it for mileage. Sorry, the system will not let me upload the entire document.

Its not possible to get the numeric readout display above the needle, because that gauge doesn’t show actual oil pressure. However, that doesn’t mean the PMC doesn’t get the information.

FORScan Lite must not have the PID to display the actual oil pressure, because I can’t find anything that appears to match that in the app.

The oil pressure control solenoid (Fuel Economy) dumps oil pressure down to 10-15 PSI at idle & warm engine for better fuel economy. It has nothing to do with the VCT system.
The oil pressure can be monitored using the Forscan PID for oil pressure on the Oscilloscope/Table Tab...
