AC problem - long

Long time reader and new member. Finally got around to registering mainly because I'm wondering if anyone else has seen this problem or heard of it. I've had my '15 plat for a few month and everything's been great (other than the seat cooler issue). Anyway I recently took my first long trip which was 9hrs down I-95 to FL. About 5hrs in, I noticed it getting warm in the cabin and lowered the temp. That's when I noticed no air blowing. Finally I decided to power off the climate control and turn it back on...well it fired back up. However, for the remainder of the trip, this happened sporadically. Until I had to pull over, shut down the truck and restart it. Worked fine for the remaining hour.
Well the trip home the next day was much the same, about 5hrs in, intermittent AC...turn off and then on...works for a while..repeat.
Last weekend I took a 7hr trip and around 4hrs in, it started again and continued until at my destination. However, on the trip home, it worked perfectly.
Took it to the dealer and they didn't notice any codes so the tried to duplicate to no avail. They will try again tomorrow.
The only difference I can think of between when it didn't intermittently turn off and did was that on the last return trip it was cooler (overcast and raining).
Anyone seen this or have any ideas?

Just to help flesh out the details:
Where you using it on "Auto"?
What was your desired setpoint, vs. what was the outside temperature? I wonder if it's possible something was going on that would make it think it was achieving its setpoint, but really wasn't?
Is it possible that conditions were extreme to the point that the A/C was forcing a shutdown periodically? I don't know the theory of operation on these things, but I could imagine if it was crazy hot/humid and you had it set to the minimum (65, or LO, or whatever) that it might need to shut down so evaporator coils don't freeze up or have something else overheat.
