The new struts will probably come down some and settle once they start to break in.

Replace the 2.5" block with a stock 1.25" block from the 4x4.

(Hope the Rear Strut will settle a little over time). I love the height... Didn't measure the actual end results but its probably a hair taller than the stock 4x4... The ride definitely stiffened up a little using the Rough Country Strut and if I had to do it over I might ask if the Factory strut could be used on this set up (I don't know if the Rough Country is any longer to compensate for the lift or not). Overall I am very please with the results and honestly it make the truck feel a little more like a truck than a "REALLY" big living room on wheels!! I know your original question was about the wheel gap. Even with the basic street tire that's on there, I think it isn't too much. Personally I will be changing out to a More aggressive tire, probably a BFG KO2 275/60-20... Not 100% sure on actual tire or actual size yet... Hope this helps man!!
So is it spacers or new struts? I though spacers don't change ride quality??

Both... Front was a 2.5" spacer and rear is a block/strut combo... Don't know about the ride quality of just a front spacer.
