Default 16 5.0 normal temp?

i have a 16 5.0 king ranch and recently did the forscan temp gauges and ive been watching it a couple days and the coolant stays around 217 and if i stop and turn the truck off and then start it back like running in the stor for a sec and then leaving it ranges from 217-230. how normal is this and if not how to i get the temp down ive checked coolant and its always at the same level.

Normal operation.

Your questioning of the temperature is exactly why many auto makers dont display the actual temperature anymore.

Temp displayed I might add, is cylinder head temp, not actual coolant temp. Actual coolant temp can range from 10-20 degrees less once stabilized

The engine coolant temperature displayed by the IPC is an inferred coolant temperature. A CHT (Cylinder Head Temperature) sensor is located in the engine cylinder head and varies in resistance as the temperature varies. The CHT sends a voltage signal to the PCM. The PCM then determines an inferred coolant temperature, and any over-temperature information, and sends this information over the HS3-CAN bus to the GWM (Gateway Module). The GWM then sends this information to the IPC over the HS1-CAN bus.

The IPC uses two messages to control the temperature gauge. The first is the engine coolant temperature data provided by the PCM. The second message is the engine overheat indication request, which is sent by the PCM to the IPC when an overheating condition exists. When the IPC receives the engine overheat indication request message, the IPC sends the temperature gauge to full hot, turns on the overtemperature warning indicator, and provides a digital temperature displayed above the temperature gauge on 8" displays.

This is perfectly normal. When you shut down an engine at operating temperature the coolant stops circulating through the engine yet the heat generated by the last combustion cycles has not been removed. This latent heat will increase the temperature of the cylinder head and then eventually the coolant inside the cylinder head. Upon a restart, coolant then circulates which brings the temperature back down to normal.

So why does it always run at 217+ regardless? Do I have a bad CHT? I’ve cleaned the radiator and checked the coolant fans still always run

Not sure, but even towing my 28' pontoon it doesn't get over 209 that I have ever seen.
