Default Temperature Gauge Dropping Off

2005 f150 5.4 temperature gauge goes from normal to 0 and beeps and goes back to normal. It seems very random the real mystery is that at highway speed and if gauge is at 0 and you let off the gas for 4 seconds it will always come back to normal like clock work. Dealer wants to replace the temp sensor but it is a 4 to 5 hour job and they will not guarantee that it will solve the problem. Anybody out there have a similar problem.

WOW, where did they hide the sensor? Might consider checking the connector from the engine to firewall, thinking engine torque is affecting connection. Also check all ground wires from engine to battery, firewall, and chassis.
