Replacing shocks
Generally, and I am by no means a shock expert but, gas shocks have fluid also but are pressuized with nitrogen which prevents cavitation or foaming of the fluid resulting in a stiffer shock especially under heavy use. In other words, an old guy like me depends on the inefficiency of the hydro shock to give me a softer ride.

The 5000's are hydros, you may end up paying a bit more for them due to the Rancho name. I believe most all shocks are basically manufactured by either monroe or gabriel.. So, choose if you want a hydro or gas, then get the best deal.
For your purpose which sounds like occasional wheeling with mostly daily driving, it's probably not worth the extra cash for the gas shocks unless you really just have to have them.
