Phantom Redundant Engine Light

Long-time lurker, first-time poster. I bought a used 89 2wd 5spd 5.0 a few months ago and at that time the previous owner mentioned that the redundant engine light would pop from time to time. He had been troubleshooting but couldn't find the issue.
OBSERVATIONS: The redundant "ENGINE" light flickers and occasionally remains lit in a two scenarios: 1. If I nearly stall, resulting in low idle; 2. If I travel at highway speed (55mph+) for roughly 15 miles+. In both scenarios the light will not be on or flashing while vehicle is in motion but will flash or come on while sitting at idle. Idle is not below normal or hunting.
WHAT I'VE DONE: The first thing I did was crack open the owners manual because there's not much on the interwebs or my Haynes manual about what that redundant light is for. So next, according to its recommendations, I checked the coolant level. All OK there. Next, my oil pressure gauge doesn't work (not even in dummy mode, it's just inoperable), so I took the truck to my mechanic for an oil pressure test. All came back fine there. Finally, I bought a code reader on amazon. Both KOEO and KOER tests came back with no codes.
QUESTIONS: So, what are y'all's thoughts? Could this be a result of the oil pressure gauge being inoperable? Is it a short or something? I'm not sure what further steps to take at this point. Truck runs fine. Cold start idles around 1500, drops to 900 after about 60-90 seconds and stays there.
