So when you let off the clutch in neutral it dies? It doesn't pull the truck at all?

If so then there may be a problem with the clutch safety switch

Clutch safety systems are an interrupt for the starter. So you won't start or crank the engine while in gear. If you are certain the clutch pedal action has a bearing on the engine shutting off, check for a wire chafing on the pedal and possibly shorting out ignition. It definitely sounds spooky to me.

if its the switch on the back of the clutch pedal the the wiring has been cut to bypassed the switch before i had gotten it but that wouldnt cause it to die after it has been started would it?

I agree, releasing the clutch pedal or engaging it, should have no bearing on the engine running. If tranny is in neutral, the engine should run whether the clutch pedal is depressed or released. Something is quirky. Sorry bud, I have no ideas.
