Keep in mind that horsepower wasn't a strong suit in the 80s and early 90s for any manufacturer - the 88-91 4.9L was rated at 150hp, the 5.0L at 185hp, and the 5.8 at 210hp - which I blame on emissions regulations getting ahead of the technology of the day. Acceleration will not be breath-taking with any unmodified motor.
If the motor is in good tune and isn't bucking during acceleration - suggest to look for airflow restrictions - plugged air filter, plugged cat, etc. Perhaps toward the more extreme - do a compression check to look for weak rings or worn cam lobes.
