So my question is if you had the 3.5 or 3.7 gearing, would the mpg be better or worse?

I do 85-90 miles a day from just north-west Mebane to RTP, so curious how much the gas pump any I will be getting to know each other.... wondering how realistic 20+ mpg on my daily commute..... though I'll be looking at the 3.5 Ecoboost and likely the 3.5 gears....

I had the cruise set at 72MPH on I-40, 63MPH on RT-24. There was a lot if idling due to traffic in Emerald Isle, and there was some around town driving after filling up before making the trip, which will lower the calculated MPG.
I'm extremely happy with the 5.0L. I used the Nav system for the first time, and it worked extremely well for re-routing my route for traffic incidents.

I had very similar results with the same setup (5.0 and 3:31). Went from Florida to Virginia. 697 miles, 11 hours, 53 minutes, flat in Florida, heavy grades in NC and VA up interstate 77 and 81. 19.5mpg average for the trip which I was actually shocked by. Got just over 20 on the way home until I hit Jacksonville and my speed went up substantially as I was anxious to get home. Very impressed with the setup overall and especially on long hauls.

This pic is from my round trip this summer from Charlotte to Corollla in the Outer Banks. I was pretty impressed. FWIW- I have noticed that 72 is my optimal speed. Much slower and I personally go insane. Much faster and my mileage suffers incrementally.
