Suggest to ensure you're running a good oil filter - the Motorcraft FL-1A is a good standard go-to - for less pressure drop than the Prontos or other cheapies. Make sure you're running the correct multi-weight oil for ambient temperatures. Other than that, older Fords were notorious for low pressure readings - whether this is real or a gauge problem - dunno. As long as it's not knocking or clacking, I'd roll with it.

Ford faked-out the oil pressure gauge in '87 due to too many dumb customers complaining about insignificant fluctuations. Any needle position other than low-peg indicates sufficient pressure. Any movement that doesn't go to low peg indicates electrical problems - not oil pressure.
