Don't guess. If that's the case, you should easily see that with a scan tool connected looking at live data.

 

I put a new mass airflow sensor in it. It did not make any change.
It’s still cold starts great and runs normal for about 30 seconds then it starts to either miss or it’s just a timing spike but the timing does spike and fluctuate as it’s idling. I can see it on my scan tool. If you drive it, it gets even worse, but it still runs. It just seems to miss
or stutter or spike worse.

There's over a hundred bucks down the drain. Did you actually observe its data from a cold start until the problem begins and see it change as the engine roughness began ?
