I want to get some LED's for the outside but I love the way the regular puddle lights and interior lights kinda softly fade out as I close the door, Would LEDs still do that?

Yes, they do fade out, but with a slight flicker. I wouldn't hesitate to change them out. It's worth every penny!

Changing the puddle lights involves cutting the original housing as it's a sealed unit. There was a thread about this.
The lights do fade with a slight flicker with LEDs.
For the license plate lights, I got the single flat LED as the LEDs on the sides only get in the way of installing the bulb and don't increase the light output from the housing. (I had the ones the OP posted and replaced them with the one below).
Something like this:
or this:
Also, there is a slight power bleed at least in my 2010 so not all LED modules will go completely out as it should.
The bed lights, map lights and dome lights were a huge difference and much brighter than stock bulbs. They're also LED so they'll last the life of the truck.
**Note that LED bulbs are polarity sensitive so if it doesn't work one way, turn it 180° and it should work.

The bulbs I bought from superbright aren't polarity sensitive which is nice so you dont have to worry about burning out your new bulbs. They make some good products! Also bought new mirror turn signal led strips today at advance auto parts they came out with a new set that is 80% brighter than what most you guys have on here. Ill submit some pics of them later tonight!

As far as the puddle lights go they are held in by a clip on one side, there is slot where a screwdriver can be pushed in to unclip it from the mirror assy. Then you have to cut the puddle lamps in half with a dremel, another guy in the forums did it already. License plate lights have same thing for a screwdriver to uncllip them from the bumper.

I put my puddles in after I bought the truck and the only thing holding them in is a stationary slot on one side and a bendable plastic clip on the other to " pop " it into place
