Would you tow this

You need to better understand your policies, and how intent and fault impact jury decisions.
There are limits for liability. Many take minimums. So if you take $300,000 and the jury sees you grossly negligible and awards $2 million, time to write a check for $1.7 million.
But that isn't the real issue, which is people refusing to be accountable for their actions. How many that profess to tow way over capacity would be willing to both explain that to their families upfront ("hey wife and kids, I'm going to tow way more than I should, any concern with that?") AND if the unthinkable happens and they cause a wreck and others are injured or killed be willing to sit down with those families and explain why it happened?
Intent matters.

I tow a 1990 Prowler 5th wheel that weighs over 6500 lbs. with a 2011 Screw with a 5.0 and 3.55 gears. Add helper springs to your axle and higher capacity tires and go. You should not have a power issue.

Went by a CAT scale today. Me, wife, full tank of gas, hard tonneau cover, few odds and ends in the bed. Pretty much what I expected.
Steer axle: 3780
Drive axle: 3100
Gross weight: 6880
GVWR: 7350
F&RAWR: 3850
Max tire load: 2601 at 50psi
Add 750 lbs of tongue weight would put me over GVWR by 280 lbs and right at my RAWR.

With a WDH only about 3/4 of that 750 ends up on the truck. You'll still be a little over, but less than 100 lbs.

Btw, I had to go to two different scales to get a correct weight. First weigh got screwy numbers so I reweighed. Still didn't make sense. It was just my truck no trailer yet the weight ticket showed 500lbs on the trailer axle and too heavy on my front axle. Drove 30 miles down the road to another scale to get numbers that make sense. I'll be going back to the first scale for a refund.

Re-weigh at first scale
