Luckily, I was able to get a good deal from the dealer closest to me - I just need to drop down the canyon about 3000 feet and 15 miles to my east, so no big drive.
I sit about 3 inches over stock, a combination of larger Toyo Open Country tires and a slight lift in front and rear.
I figure the tail gate is gonna be close, but, if it won't open flat when hooked up I'll just need to deal with it.

Since you sit a little higher you may be able to open the tailgate all the way. If I was sitting a couple inches higher I think it would clear.

Let me know how it goes towing it! I may want to do slightly larger tires at some point.

Any decent welding shop can relocate the tongue jack a few inches farther back on the frame of the tongue so the tailgate will clear.

That's true. I've had some guys do a bit of welding to customize tongues in the past.
This time though, it's more a concern about how high the ball and the hitch will end up.
The trailer sits real high. And I don't have a 3/4 ton to haul it with, just a 1/2 ton.
Even though I'm lifted some, the WD hitch may need to sit pretty high to tow level.
We'll see.

The tailgate doesn't hit the tongue jack it rests on the tongue itself. The tailgate is just a few inches from laying all the way flat.

Picked up the 2019 Outdoors RV 21RBS on Saturday, managed to get it up my driveway, turned around and setup before the rain came in.
Truck and trailer towed well together, climbed 3000ft elevation to my house over 10 miles.
Transmission temps didn't climb over 205 at the peak, which is just a few degrees hotter than when I'm not towing.
The tailgate on my truck does clear the top of the trailer coupler when it's attached, so all's well!
I'm sitting 2-3 inches over stock.
Pics to follow.

Tailgate to WD hitch clearance
For some reason the picture won't post. Trying again.

Looks good! Sounds like you had about the same weather I did when I picked mine up. I got it parked and right after that it started pouring!

I am jealous that you can open your tailgate with the trailer attached. What hitch setup did you go with?

Any issues with the PDI? The only thing they had to do on mine was adjust the bathroom door because it wasn't latching properly.

When is the first trip?
