I wouldn't get an F250 gasser simply due to terrible mpg and resale of a gasser 3/4 ton truck.
As for the F150, there should be no carbon build up issues on the gen 2 3.5EB with port and direct injection. Port injection takes care of the carbon buildup issue on valves.
If you go F250, go diesel. I have no idea what the payload rating is on a F250 gasser, but would hope it substantially higher than an F150.

The only advantage to the F250 is it's a heavier truck and will be more stable in the wind. How long is your travel trailer? If it's over 28-30' you would benefit from the F250.
My lighter '17 is not nearly as stable in the wind (whether I am towing or not) as my old '13 steelbodied F150 was.
The F150 ecoboost will out pull, out run and beat the 6.2 F250 on everything else

If it's your daily driver, I'd buy an F-150, and keep a set of 4 LT tires for when you tow. You'll have the mpg when you want it, and decent towing capability when you need it. The LT tires make a big difference when towing but the ride quality and MPG suffer.
I have two 3.5L EB's in my house (150 and Explorer) with 85,000miles between the two of them. Floor it when you get on the interstate once a week, enjoy the acceleration, and you'll have no problem with carbon build up.
