I am with you on not wanting to push anything to its limit. How much does your 30' travel trailer weigh and how does it feel behind your truck. I wouldn't feel all that uncomfortable descending those mountains with these new trucks. Brakes are much better now than what they were 15 years ago and careful people made fine back then with drum brakes on their towing rigs. Having a heavier truck is just that much more your brakes are having to hold back. Getting an exhaust brake though with a diesel would help.

Actually your wrong.. The tongue weight of a bumper tow trailer is in the neighborhood of 12% which is 1356lbs of 11,300lbs which leaves you 479lbs. Then minus 100lbs for the WDHitch so now you are at 379lbs, now minus 216lbs for 36 gallons of fuel(assuming you have the 36gal tank??) now you have 163lbs left for passengers and gear in the truck without putting anything in the bed!!!So to conclude this conversation MAYBE you can do if you weigh 162lbs and only bring a bottle of water with you on your trip. Your truck will be maxed out on GVWR and Tow rating so i would love to see your facial expression descending down a 6-7% grade with a load like that!!

The door payload sticker takes into account a full gas tank so you don't need to subtract that. My crew HD has 2171 lb door sticker. Many 3/4 diesels don't have that much. I know they can handle more but legally they are in the same boat.

Actually lowest payload of a new 250 is just over 3000lbs. According to ford.com. that is gas too.

I was told that the weight of the fuel is not included in the payload?? When they weigh the trucks on the final assembly line and slap the stickers in the door jams i don't think they would be filled with fuel??? But i have been wrong before.

Any 5th wheel would be super duty for me. I wouldn't consider one with my f150
